Hawaiian Back Yard BBQ Puleho Style Beef Steak On Watercress Bean Sprouts Salad
(You can use Striploin, New York Steak or any desired cut of meat)
Ingredients: Sweet Soy Marinade: 1 cup water 1 cup soy sauce 1 1/2 cup brown sugar ¼ cup mirin ¼ cup cilantro, chopped 1 tbsp ginger, chopped 1 tsp garlic, chopped 1 tsp red chili flakes 1 lemon (sliced)
Method: · Mix all ingredients for marinade together and let sit over night · Adjust taste by adding a little more water if necessary · Marinate meat for at least 3 to 4 hours, bigger cuts overnight · Broil on BBQ grill until cooked to desired doneness · If using bigger cuts, set aside and cut against the grain
Teriyaki Glaze Marinade Water Corn Starch
Method: · Heat the marinate to simmer, and add water to taste, to cut saltiness · Thicken with cornstarch/water paste to right consistency and strain
Oriental Watercress Bean Sprout Salad
Ingredients: 1 lb bean sprouts (mung beans) 1 bunch watercress ½ tsp garlic, chopped 1 ½ tbsp sesame oil Togarashi or chili pepper for taste Salt and pepper for taste 1 tsp roasted sesame seeds
Method: · Cut watercress in 1 ½ inch pieces · Blanch watercress and bean sprouts for one minute in hot water · Cool ice water quickly and strain/dry · Add rest of ingredients and mix well · Adjust seasoning with chili pepper, salt, and pepper
Presentation: Corn sprouts Roasted Sesame Seeds · Arrange small portion of salad in middle of plate and lean two to three slices of meat against it · Drizzle teriyaki glaze around with sesame seeds and corn sprouts
